Making a Pork Pie? Can I change the recipe a little?
I am just learning to cook and I have a recipe for a pork pie. It calls for 3lbs of shoulder of pork and 2lbs of pig feet. I don’t currently have that in the house but I do have 4lbs of pork tenderloin in the freezer. Could I replace the shoulder and feet with tenderloin or is it within my best interest to stick to the original recipe?
It’s a good question. If you want a classic pork pie, you do want the shoulder and feet. The feet are more about lending a gelatinous, velvety texture to the pie filling than taste. However, some more modern recipes call only for the shoulder, and that’s where I’d go next with it. The thing about pork tenderloin is that it doesn’t necessarily need that long slow baking and prep. for tender meat, and it doesn’t have the fat content that the pie kinda needs. It’s almost like grinding filet mignon and using it for chili, ya know? So I guess my answer is, head to cubed pork shoulder for the fat content, and for the fact that it does need to be worked with, probably either by stewing or grinding?
